Food in general is my Achilles heel. I love cheese. I love chocolate. Sour Patch Kids will always hold a small piece of my heart (despite leaving my taste buds raw). And, bread … oh, dear, delicious bread … why, oh why must you taste as good as you are bad.
So, in an effort to combat these vices, I’ve started looking into and researching more about the Eat-Clean Diet. I read The Eat-Clean Diet Recharged and scoured through the cookbook hoping to find some appealing recipes to sprinkle in. I started with breakfast and must say … I freaking love oatmeal (doctored up with milled flaxseed, wheat germ, vanilla extract and banana).

Last week, I make the Eat-Clean Chinese Chicken. Not only was it easy, but it was also delicious (and boy approved). Me being me, I doctored the recipe just a smidge and added more veggies and an egg (can’t go wrong with more veggies and protein).
After the success of round one, I scoured for another dish to make this week and found two. The first, Apricot Chicken Curry a la Rene, has been on hold as we search high and low for some Garam Masala (finally found it!). I’ll make that one later this week.
Tonight, I whipped up the Brown Rice Meatloaf – with one small change (of course). I have not yet mustered up the courage to make the yogurt cheese, so we subbed with part-skim cheddar cheese. Again, this dish was fairly easy to prepare and tasked amazing. Very flavorful and filling. The best part … I have enough for lunch tomorrow.
